Ilocos Miki is a hearty and comforting Filipino noodle soup popular in the Ilocos region of the Philippines. Made with fresh egg noodles, chicken meat and broth, topped with chicharon bits, spring onions, toasted garlic, and calamansi.  

Ingredients

  • 500g Miki Noodles

  • 500g Chicken Breast

  • 1 Large Garlic

  • 1 Large Onion

  • 3-4 Tbsp. Atsuete Oil

  • 2 Tbsp. Fish Sauce

  • 1 Tbsp. Ground Black Pepper

  • Chicken Broth / Water

  • 1 pc. Chicken Cube

  • 2 Tbsp. Chicken Powder

  • Spring Onions

  • Toasted Garlic

  • Chicharon Bits

  • Hard Boiled Eggs

  • Calamansi

Directions

  • Put chicken breast in a pot and simmer for 15 to 20 minutes. Add a pinch of salt to taste. Let the chicken meat cool down and shred the meat. Save the broth.boil the chicken breast
  • Saute onions and garlic in atsuete oil together with the shredded chicken. saute garlic onion chicken breast
  • Add fish sauce and ground black pepper and saute for a few minutes.season with fish sauce and pepper
  • Add the chicken broth and bring to a boil. Add more water if needed.add the chicken broth
  • Add chicken cube.add chicken cube
  • Add the miki noodles and cook for a few minutes.add miki noodles
  • You may also add chicken powder to add more umami taste.add chicken powder
